portuguese grey sea salt
“This salt isn’t a flavor-enhancer; it’s flavor incarnate.” — Justin Campbell, Captain’s Coffee in Nahcotta, WA.
Through much experimentation, we’ve found that a select few people are actually able to detect the sensual qualities of this salt. For me, there are three distinct stages of this taste experience. The first is a taste-texture combination: the salt is coarse and adds an exhilarating crunchy texture to salads, fish, or your chunk of dark chocolate (no, I am not making this up). The initial flavor is wake-up-your-mouth salty and you’re wondering what just happened. The next phase is something of a shock to your system, when you realize that you haven’t just eaten salt. You’ve eaten intense salt – like some super-concentrated, superhero salt. The sensation is akin to falling in love when you’re 40 but it feels like it did when you were 16. Yeah. Like that.
The final phase, for me, has a smoky finish that makes me want to take a sip of my viognier and then take another mouthful of whatever delivery system is lying under the BelaMandil.
Heavenly and just slightly wicked.
